Nei nostri Trulli nella stessa atmosfera che respirava secoli fa produrremo il formaggio nelle varietà tipiche con le stesse tecniche che da generazioni tramandano l'antico sapere. Insieme Sveleremo le origini delle nostre produzioni casearie tipiche e i suoi segreti saranno il vostro bagaglio dell'esperienza, un tesoro da portare a casa.

In Puglia si producono tantissimi tipi diversi di formaggio da latte di mucche, pecore e più raramente capre ma i più tradizionali sono legati alla stagionalità: durante l'inverno si produce il formaggio pecorino e la morbida e succulenta ricotta fresca mentre l'estate è dedicata alla produzione del cacio-ricotta, il tipico formaggio che accompagna le Orecchiette, la nostra pasta tipica rigorosamente fatta a mano.

L’invenzione del formaggio è antichissima. Si fa risalire a circa seimila anni fa e la Puglia divenne nel tempo importante centro di produzione per tutto il Sud Italia.
Prepareremo insieme il latte e lavoreremo la "cagliata" tra racconti di storia locale e gastronomia, perchè al Sud il lavoro è sempre accompagnato da un ricco momento conviviale. Una tradizione che tramanderemo a voi per un'esperienza completa e suggestiva.

Si sceglieva ora una masseria ora un'altra per formaggi dal gusto diverso. "E' l'erba che mangiano e l'aria che è diversa..." ci raccontava mia nonna. Ed era vero. Nonostante i pochi chilometri di distanza, dalla marina alla zona collinare, il formaggio aveva sempre un gusto diverso, unico. Ognuno con la propria "aria", sapore e morbidezza... Dalla nostra terra e i nostri inconfondibili sapori nasce questa proposta.

Nei nostri tipici Trulli a 5 coni, immersi nella splendida campagna della Valle d'Itria, patrimonio Unesco, riscopriremo una classica giornata contadina fra gli ulivi, dove tutto è rimasto come un tempo. in attesa della cagliata visiteremo i trulli, ne racconteremo origini e modi di vivere. Lavoreremo insieme il latte per produrre il formaggio (diversi tipi in base alla stagione) e lo degusteremo insieme ad atri prodotti tipici.

Wonderful experience for the whole family. My 1 and 3 year old loved seeing all the farm animals and my 3 year old got involved in the cheese making process as well. We were lucky enough to see olives being pressed into oil on the day we were there. A beautiful location for this experience.

A very special day at the Masseria that I will treasure forever! :) I was shown around the farm and met all the animals: "the running piglet", dog puppies, one day old sheep, one week old piglets, many many lovely dogs, horses, cows, goats, donkeys, chicken,... Then I was invited to help produce Ricotta with Maria and her mother. It was a fantastic experience to see, feel and smell and at the end even taste how the cheese is made. They made me feel welcome and I fully enjoyed the day there. I'm thinking about applying to work there as it was a lot of fun making cheese in this beautiful and friendly Masseria with the loveliest dogs! ;)

Very nice experience. We made one cheese, which is easy and fast to do and we were introduced the farm and animals :)

There aren’t enough wonderful words to describe Simona and her ability to be welcoming, friendly, knowledgeable and helpful. This experience was fantastic in every way. Simona picked us up and we headed to the farm together. There we have found Maria, one of the younger owner, welcoming us with the incomparable southern warmth and with apulian goodies homemade by her and his family. She shared her life experience and her knowledge with us and made us discover many new interesting things. Simona was also a great traditions-teller and very knowledgeable about the surrounding towns and its traditions. They explained us how they make the cheese and guided us while trying ourselves to make it. A very fun and delicious experience, their products are heaven on earth! We stocked up on cheese, jams, yogurt and homemade typical products given that they’re super delicious and healthy. Simona and Maria have been so welcoming, we it felt like home all the time from the beginning. The farm is very nice and relaxing and we did a tour to get to know all the wonderful animals living there. You can see how much Maria and her family cares about them by how wonderfully they treat them. You'll hear the story of Camilla, the sweetest donkey in the world and you'll see how much love they put in what they do. I strongly recommend you to book this experience, it will be super interesting, relaxing and fun wether you are traveler or a fellow citizen.

An absolutely wonderful morning at this farm. Simona was a truly lovely and well informed host. Maria helped us make the cheese and was kind and funny. They were both great with our 2 year old, who loved seeing all the animals. The whole farm is organic and animals are well cared for. It was so interesting and fun. The shop sells the best mozzarella I have ever had! Thank you xxx

We went on this farm visit with a 5 year old and a 1 year old, and had a wonderful time. We all enjoyed the animals and farm visit - there is a large variety and it is great for kids. The cheesemaking was good fun and educational. The cheese was also delicious! Everyone we interacted with was very friendly. Simona was an excellent guide, she was flexible and kind and relaxed, and very helpful. This is definitely a special experience and something we will all remember.
